Nigerian Plantain Frittata (without oven)

Hi guys. Today’s recipe is coming with a twist. We’re making a classic Italian cuisine with a Nigerian twist. Frittata, but let’s make it with plantains. This one is for my plantain lovers. This beautiful recipe adds a pop of colour and flavour to your meal.

Ingredients

2 large, ripe plantains, peeled and sliced

3-4 eggs

1 large onion, chopped

1 cloves of garlic, minced

1 teaspoon grated ginger

1/2 teaspoon ground cumin

1/2 teaspoon paprika (any other spice)

2 fingers of sausage (chopped)

Salt and pepper to taste

2 tablespoons vegetable oil

Chopped bell peppers (green, red, yellow)

Instructions

1. Heat 1 tablespoon of oil in a large non-stick skillet over medium heat and fry plantains until golden brown. Remove from oil and place in a bowl.

 2. Add the chopped onion in oil and cook until softened, about 3-4 minutes.

3. Add the chopped bell pepper and sausage and stir

4. Whisk together the eggs, salt, pepper, cumin, paprika, garlic, and ginger in a large bowl.

5. Pour the egg mixture over the mixture in the skillet.

6. Immediately put on low heat and neatly place the plantains on the eggs. Cover the pan and cook for about 5-7 minutes, until the edges start to set.

7. Use a spatula to gently lift and fold the edges of the frittata towards the centre, allowing the uncooked egg to flow to the edges.

8. Garnish with veggies of choice and/or cheese

9. Slice the frittata into wedges and serve hot.

Tips

Use a non-stick skillet to prevent the frittata from sticking

Don’t overmix the egg mixture so it doesn’t become too dense.
